This recipe is my newest favorite summer spread. It’s good on Ritz cracker, scones, toast, and even beer biscuits! It’s like the best of both worlds: butter and jam without the nasty jam texture. Everyone should try this easy recipe.
Strawberry Honey Butter
1 pint of strawberries
2 tablespoons of honey
1/4 of a lemon squeezed
1 1/2 sticks of butter, room temperature
Place hulled strawberries in a food processor and blend until smooth. the original recipe says to run the mixture through a strainer, but I like the little seeds so I skip this step.
Place the pureed strawberries, honey, and lemon in a pot and bring to a boil. Boil for 3 minutes and then remove from heat and let cool to room temperature.
While the strawberry mixture is cooling, let the butter be softening up to room temp.
Once butter and berries are soft and cooled down, mix them with a mixer until they are well blended. After this it’s ready to eat, but if you let it sit for a while it gets even better.
Now everyone go make Strawberry Honey Butter – it will change your life (or more likely the size of your hips if you don’t share!)

hey girl…sweet post on the butter…i will be trying this soon
i have a question about the fondant stuff…im thinking about making a really pretty cake for my b-day haha. what are your suggestion on whats reallly good. frosting and all? I would love a layer or two maybe w/ chocolate or strawberries??
